Ingredients
- 1500 gram Whole Chicken
- 1/2 cup Butter
- 2 tablespoon Diamond Crystal Salt
- 1 unit Rosemary Spring
- 6 unit Thyme Springs
- 1 tablespoon Onion Powder
- 1/2 unit Lemon
- 1/2 unit Onion
Make Butter Rub
- Melt butter in small bowl.
- Mix leaves from 3 springs of thyme and onion powder with the melted butter.
Prepare Chicken
- Preheat the Oven to 425˚F.
- Season the cavity of the chicken with 1 teaspoon of salt.
- Rub 1 tablespoon of butter inside the cavity of the chicken.
- Stuff the chicken with the remain thyme and rosemary and 1/2 of a lemon and 1/2 of a onion and truss the legs with string.
- Use the remainder of the butter to rub over the outside of the chicken. You can also place some under the skin covering the breasts.
- Roast the chicken for 30-40 minutes until internal temperature reaches 165˚F
