Ingredients

  • 1500 gram Whole Chicken
  • 1/2 cup Butter
  • 2 tablespoon Diamond Crystal Salt
  • 1 unit Rosemary Spring
  • 6 unit Thyme Springs
  • 1 tablespoon Onion Powder
  • 1/2 unit Lemon
  • 1/2 unit Onion

Make Butter Rub

  1. Melt butter in small bowl.
  2. Mix leaves from 3 springs of thyme and onion powder with the melted butter.

Prepare Chicken

  1. Preheat the Oven to 425˚F.
  2. Season the cavity of the chicken with 1 teaspoon of salt.
  3. Rub 1 tablespoon of butter inside the cavity of the chicken.
  4. Stuff the chicken with the remain thyme and rosemary and 1/2 of a lemon and 1/2 of a onion and truss the legs with string.
  5. Use the remainder of the butter to rub over the outside of the chicken. You can also place some under the skin covering the breasts.
  6. Roast the chicken for 30-40 minutes until internal temperature reaches 165˚F
